In Alcubilla we make a big effort to recover old traditions reñated with olive oil and, one of the perfect examples, is this old recipe of the typical "Andalusian Gazpacho". The gazpacho is one of the basic elements of the Andalusian feeding and, therefore, it's very influenced by MEDITERRANEAN DIET. “FIRST HARVEST OIL ”– “NOVELLO” – “LUQUELLO”

Trying to innovate in the Olive Oil market and giving it a special quality "status" similar to other products like Beaujolais wine, we have begun a project known as NOVELLO-LUQUELLO. This special type of olive oil was only known and consumed in the production areas but we are offering it to our special costumers beginning a few years ago.

It is made from green olives that have slightly less oil, more bitterness and can be higher in polyphenols and antioxidants.

Its characteristics are the proper ones from very early harvested olives: very intense green colour, cloudy aspect (neither decantation nor filtration) and very intense flavour (it remembers the fruit of which proceeds, with lot of notes of green fruit, grass, green leaf, pungent, astringent).

Some sediments (olive pulp and skin) can be founded after a long period but they are absolutely naturals and prove that we are consuming a true artisan oil.

This natural evolution, as an alive organism, makes it an oil that must be enjoyed soon.

"PEDRO XIMENEZ" SWEET WINE VINEGAR

Produced from the "Pedro Ximenez" variety of sweet wines, here you are a sweet-sour vinegar with an unusually intense mahogany colour. Its aroma, which is undeniably similar to that of the grape variety from which it's produced, combines with the fresh essence of sun-dried grapes. Its flavour stands out for its sweetness, natural character and velvety texture.
